Soft gingerbread with hormone harmony

Here you have a fantastic recipe for tasty and healthy soft gingerbread with an extra dose Hormone Harmony. The is a perfect addition to your Christmas party or to enjoy during cozy winter evenings.

Ingredients:

  • 40 grams of fresh dates without seeds.
  • 1 - 2 tsp Hormone Harmony
  • 1 tbsp chia seeds with 3 tbsp water
  • 1 dl almond flour
  • 2 tbsp coconut flour
  • 2 tbsp coconut cream
  • 2 tbsp water
  • ½ tsp baking powder
  • ½ - 1 tsp gingerbread spice

Do this:

  1. Set the oven to 175 degrees.
  2. Mix chia seeds with water, then let the mixture swell for about 15 minutes before using it.
  3. Put the chia mix, dates and coconut cream in a bowl and mix together with an immersion blender.
  4. Mix all the dry ingredients together and stir this and water into the date mixture.
  5. Line a small loaf pan with aluminum foil and spread in the batter. Bake in the middle of the oven for about 25 minutes.
